I use the pulp to make raw crackers and bread which are great.

It gives the crackers/bread great colors and texture. I am also still benefiting from the fiber of the pulp.

Raw Bread/Cake

I use the pulp from carrots and zuchini to combine in a carrot cake/zuchini bread recipe:

  • 2 eggs
  • 1 cup of apple sauce
  • 1 cup of almond milk
  • 2 cups of whole wheat flour
  • 2 cups of carrot/zuchini pulp
  • Mix together and bake on 350 degrees for 45 minutes to an hour. Test with toothpick.

I usually add raisins to it before baking and layer the top with almonds and honey.
